Sun Dried Tomatoes In Oil

Ingredients

10 ripe tomatoes (Roma or cherry tomatoes work well) 1 cup extra-virgin olive oil 4 cloves garlic, thinly sliced 2 teaspoons dried basil 1 teaspoon dried oregano 1 teaspoon salt 1/2 teaspoon black pepper

Step 1:

Wash the tomatoes and cut them in half. Take out the seeds. If you want smaller pieces, cut them into quarters.

Step 2:

Put the tomato halves on a baking sheet with paper. Sprinkle a bit of salt on top. Leave them in the sun for 2 days. If it's not sunny, use a dehydrator or even a low oven can work as well.

Step 3:

Boil a glass jar for 10 minutes to clean it. Let it cool before using.
