I made the crust as simple as any crust using graham cracker crumbs, and the filling is also easy and sweet with a lovely touch of lime juice. Just like the one at Publix, I added a little whipped cream on top to make it look nicer and to add a bit of creaminess too.

Ingredients

  • ¼ cup granulated sugar
  • 6 tablespoons unsalted butter, melted

  • 1 can (14 ounces) sweetened condensed milk
  • ½ cup key lime juice (fresh or bottled)
  • 1 tablespoon lime zest
  • 3 large egg yolks

For the Topping:

  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar

How to Make Publix Key Lime Pie?

Step 1:

First, Turn on the oven to 350°F (175°C). Mix graham cracker crumbs, sugar, and melted butter in a bowl. Press this mixture into a pie dish with your hands. Bake in the oven for 10 minutes and let it cool.

Step 2:

Stir sweetened condensed milk, lime juice, zest, and egg yolks until smooth in a big bowl. Pour this into the cooled pie crust and spread it out.

Step 3:

Turn the oven down to 325°F (163°C). Bake the pie for 15-20 minutes until it’s almost set. Let it cool and then put it in the fridge for at least 2 hours but overnight.

Step 4:

Now, for the topping (which is optional), whip heavy cream and powdered sugar with a mixer until it’s thick. Once the pie is cold, spread or pipe the whipped cream on top. At Publix, they usually decorate the pie with whipped cream only on the sides and in the middle, but since you’re making it at home, you can decorate it however you like.
