  • 2 large eggs
  • 1 cup breadcrumbs
  • 1/2 cup all-purpose flour
  • Salt and black pepper to taste

Kitchen Equipment Needed

  • Shallow dishes for breading
  • Large, deep skillet
  • Tongs for flipping

Directions

Step 1: Prepare the Cutlets

You will need to prep the veal cutlets by putting them in a plastic bag and pounding them with a meat mallet until they are roughly 1/2 inch thick. Once prepped make sure to season with salt and pepper.

Step 2: Set Up Breading Station

Now you will start the breading, so you will want to get 3 large dishes. Place the beaten eggs in one dish, flour in another dish, and breadcrumbs in the last one. You will need to soak each cutlet in flour first, then in egg, and finally into the breadcrumbs making sure it’s as even as possible.

Step 3: Melt the Butter

Now you will need to heat the butter in a large pan over medium heat.

Step 4: Fry the Cutlets

Now you will need to fry each of the cutlets In a pan on medium heat for about 3-5 minutes until each side is cooked. You will want the cutlets to be golden brown once fried.

Step 5: Drain and Serve

Place each of the cutlets on a paper towel so it soaks all of the excess butter. Now you are ready to serve it with veggies and lemon.

Tips for the Best Cotoletta alla Milanese

  • Try and use fresh breadcrumbs which will make the cutlets crispier!
  • Avoid pressing the cutlets while you are frying it, it will end up greaser if you do that.
  • I recommend leaving the cutlets on the paper towels for a few minutes so they soak up all of the excess butter.
  • Feel free to try different veggies with this recipe, you can have it with roasted potatoes or broccoli!

This recipe can be paired with many different side dishes! It’s usually served with salad and parmesan cheese. I made this recipe alongside roasted potatoes & broccoli for my hubby and he really loved it.
