How To Make Hatch Green Chile Sauce

Step 1:

  • If your chiles aren’t already roasted, broil them for about 6 minutes on a baking sheet, flipping them until charred all over.
  • Put the chiles in a bowl and cover with plastic wrap, allowing them to steam for 10 minutes.
  • Remove the seeds and skins and finely chop the chile peppers.

Step 2:

  • Heat oil in a large skillet or pan and cook the chopped onions in there for 5 minutes or until golden brown and tender.
  • Stir in the garlic and cook for about 30 seconds or until fragrant.

Step 3:

  • Next, add the chiles, oregano, cumin, salt, and pepper and cook, stirring, for 2 or 3 minutes to the flavors meld together.

  • Combine 2 tablespoons of cold water with ½ tablespoon of cornstarch and stir it into the sauce.
  • Simmer for a couple of minutes or until thick. Mix in the lime juice and take the sauce off the heat.
